Recipe: San Franciscajun Jambalaya
Following the tradition of localizing recipes through the use of local ingredients, here's the delicious San Franciscajun Jambalaya. Preparation time: about 15 minutes.
Ingredients
- 1 chopped onion
- 2 garlic cloves, minced
- 3 bay leaves
- 1 diced Poblano chile
- 0.5 cup of diced celery
- 10 tiger prawns or large shrimp
- 1 boneless pork chop, cubed
- 8 oz of Moscow garlic sausage, in large cubes (you can get it at the New World Market, on Geary)
- 8 chicken winglets
- 4 cups of hot (temperature) chicken boullion (you can cheat w/water + 1 spoonful of Knorr powder per cup)
- 4 tablespoons of virgin, unfiltered Spanish olive oil (it tastes better)
- 0.25 of the spiciest, freshest cayenne powder you can find
- 0.5 teaspoon of Encona Hot Pepper Sauce Original (I thought about it... but no, don't use Sri Racha; its flavor will overpower everything)
- 2 cups of rice
- Salt and pepper to taste
Preparation
- Set a 12" skillet on medium high fire
- Heat 3 spoonfools of oil in the skillet
- Brown the pork cubes in the oil; remove them from the skillet
- Brown the sausage; remove it from the skillet
- Brown the winglets; remove them from the skillet
- Add about 0.5 spoon of more olive oil - you don't want the skillet to dry
- Brown the shrimp
- Put the chopped onions, garlic, Poblano chile and stir for about 1 minute; you can stop when it gives out a great smell
- Put back the sausage, pork, winglets, sprinkle with salt and pepper to taste
- Stir all the meats and veggies until the onion is translucent
- Dump the 2 cups of rice on top and any remaining olive oil (about 0.5 spoon); mix a little
- Dump the half cup of celery into the mix
- Dump the 4 cups of boullion in the skillet, the cayenne, bay leaves, and the Encona sauce and stir
- Wait until it starts to boil
- Reduce the heat to medium low, cover the skillet
- Wait 25 minutes - don't touch the f...ng rice!
- Turn off the heat, and let it rest for about 5-10 minutes
- Uncover and wait another 30 to 60 seconds to let everyone around you smell it; their mouth will water, and their stomach will growl
